Grilled Cheese with Spinach


Anthony will pretty much eat anything in between two slices of bread that has melted cheese...then again who wouldn't?  He has yet to eat a cold sandwich, no I'm not kidding!  He refuses to put a cold sandwich to his lips, however if it is hot from the stove down the hatch it goes.  He is not the biggest fan of vegetables we are working on it.  Adding fresh spinach to his sandwich accomplishes two things he gets a hot sandwich and mommy is happy he is eating some vegetables.  I have added tomatoes, spinach, arugula, basil and peas, I have added several vegetables to his sandwiches and he eats them every time.  So next time your making the tried and true grilled cheese try adding some vegetables!  

INGREDIENT:
2 slices of whole wheat bread
2 slices of american cheese
2 tablespoon of chopped fresh baby spinach 
1 teaspoon of butter

METHOD:
1. Place 2 slices of bread and place spinach in center of sandwich
2. Heat a teaspoon of butter and brown sandwich on both sides

    Hello there. Just checking in on you. I love this recipe! I also watched Food Inc. recently. I can't believe how much I didn't know about the food industry. My husband is the same way as your son. He'll pretty much eat anything between two slices of bread or hidden within melted cheese!
