Pigs in a Blanket Stuffed with Veggies


What kid does not like hot dogs?  I created this meal as a healthier version of pigs in a blanket with pea shoots in the middle.  Pea shoots are the leaves of pea plants they are a mild version of a pea that you can sneak into just about any meal.  If you can't find or have pea shoots you can use whatever vegetable you have on hand, grated carrot and spinach work well also.  I stuff the hot dogs with a veggie of choice and american cheese then wrap them up in store bought crescent rolls.  I prefer Applegate organic hot dogs they are grass fed all natural beef without the use of antibiotics or nitrates...the less chemicals and weird stuff he consumes the better.  Hope your little one gobbles up these hot dogs like my little guy does...enjoy!

INGREDIENTS:
5 hot dogs
1 package of crescent rolls
1/4 cup of chopped pea shoots
3 slices of american cheese

METHOD:
1. Preheat oven to 375 degrees
2. Cut each hot dog into four equal pieces then split center half way making sure not to cut all the way through
3. Stuff hot dog slit with pea shoots and cheese
4. Cut each crescent roll triangle into 4 strips and roll each hot dog up
4. Bake at 375 degrees for 10-12 minutes

* Makes 20 pigs in a blanket
